Fresh and simple with all kinds of possible variations
3 teaspoons Mayan Gold Spice Mix
1 can La Morena Refried Bayo (Pinto) Bean, 440g
1 cup grated Edam cheese or crumbled feta
12 Tío Pablo corn tortillas
Cook up 1/2 of the onion with lean mince (add 3 TB of Mayan Gold to 500g of mince)
Slice lettuce and chop tomato, avocado, remaining onion, coriander
Place one tortilla in a lightly oiled and hot frying pan and warm for 1-2 minutes until hot to touch (but not stiff).
Place hot tortilla on a plate and fill with meat, bean, and other fillings – top with grated Edam cheese or crumbled feta
Fold two sides of filled tortilla together and eat by hand.
