Refried Bean and Cheese Stuffed Jalapeños
Spicy snack when fresh chillis are available
6 large, fresh jalapeño chillis
La Morena Black Refried Beans, 440g tin
½ cup tasty cheese, grated


Preheat oven to fan bake 200°C

Wash the jalapenos, slice long-wise and remove seeds (beware of seed potency and wash hands thoroughly afterwards – you might consider wearing plastic gloves). Place face up onto a baking paper lined tray

Scoop black beans into a glad bag, squeeze contents tightly into a corner and twist top. Cut the tip of one corner of the bag and gently squeeze beans into each half of the chilli

Sprinkle tasty cheese onto the top of each chilli and cook in the oven until cheese is bubbly and brown

Serve with mild guacamole and/or light sour cream
