Ingredients
1 packet Sway Orange Cinnamon Pikelet/Waffle 400g
½ cup vegetable oil
2 eggs
1/3 cup water
½ can pumpkin puree
2 Tbsp maple syrup
1 Tbsp molasses
1 tsp ginger
½ tsp allspice
½ tsp cloves
1 tsp ground ginger
Directions for Pumpkin Gingerbread
Preheat oven to 175°C and lightly grease a loaf pan.
In a large bowl, mix the vegetable oil, eggs, water, pumpkin, maple syrup, and molasses.
In a separate bowl, combine the orange pikelet/waffle mix, ginger, allspice, cloves, and ginger.
Add the dry mixture to the wet and mix thoroughly. Pour into loaf pan and bake for about 30 minutes, until golden on top.
Let cool completely before removing from pan.
