Pumpkin Gingerbread


Ingredients

1 packet Sway Orange Cinnamon Pikelet/Waffle 400g

½ cup vegetable oil

2 eggs

1/3 cup water

½ can pumpkin puree

2 Tbsp maple syrup

1 Tbsp molasses

1 tsp ginger

½ tsp allspice

½ tsp cloves

1 tsp ground ginger



Directions for Pumpkin Gingerbread

  • Preheat oven to 175°C and lightly grease a loaf pan.

  • In a large bowl, mix the vegetable oil, eggs, water, pumpkin, maple syrup, and molasses.

  • In a separate bowl, combine the orange pikelet/waffle mix, ginger, allspice, cloves, and ginger.

  • Add the dry mixture to the wet and mix thoroughly. Pour into loaf pan and bake for about 30 minutes, until golden on top.

  • Let cool completely before removing from pan.
