Popular Mexican and Tex-Mex breakfast
4 Tio Pablo corn tortillas (stale ok) sliced into strips
3 Tbl sunflower oil
1 clove garlic, minced
1 small onion, sliced
1 tsp Tio Pablo Mayan Gold Spice Mix
½ cup coriander, chopped
Salt and cracked black pepper
1 avocado, diced
1 tomato, diced
1 radish, sliced
¾ cup feta cheese, crumbled
In a large frying pan, heat oil and fry tortilla strips. Once strips begin to brown, add garlic and onion and cook for another 2-3 minutes.
In a bowl, stir up eggs, Mayan Gold Spice Mix, coriander and season with salt and pepper. Pour egg mixture on top of tortilla strips and stir through while cooking.
Remove from heat once eggs are cooked through and divide up onto two plates. Top with avocado, tomato, radish and feta. Eat warm. Serves 2.
