Layered Bean Dip

Layered Bean Dip
A Cali-Mex party food that is hugely popular
1 can, La Morena Refried Bayo Beans 440g
2/3 cup grated tasty cheese
2/3 cup light sour cream
1 large avocado
½ lemon
1 Tablespoon La Morena Chilpotle Sauce
salt and coarse black pepper to taste
1 can, La Morena Salsa Roja 210g
½ small red onion, diced
½ tomato, diced
½ cup black olives, sliced
½ cup iceberg lettuce, sliced
½ cup fresh coriander, ripped


In a clear glass baking dish, spread the refried beans along the bottom and sprinkle the cheese on top.  Place a napkin over the dish and microwave for about 1 ½ minutes or until beans warm and cheese melted
Spread layer of sour cream
In a small, separate bowl mash avocado with lemon juice, chilpotle sauce and salt and pepper.  Gently spread on top of sour cream
Next add a layer of Salsa Roja and sprinkle remaining ingredients liberally
Dip in with a big bowl of tortilla chips.  Easily serves 4
