Lamb Fajitas
Spicy Chipotle de Plata gives this dish some heat. Easy to assemble and eat as you go
250g lamb strips
3 tsp Tio Pablo Chipotle de Plata Spice Mix
1 red onion, sliced
1/2 each red, green and orange capsicum, sliced
4 tsp oil
1 cup tasty cheese, grated
Lettuce, tomato and avocado, sliced
Coriander, to garnish
8 Tio Pablo corn tortillas


Marinate lamb strips in 2 tsp Chipotle de Plata and 2 tsp oil. Let sit for at least 1/2 hour
In remaining 2 tsp oil, saute onion and capsicum slices.  After 2 minutes, add remaining 1 tsp Chipotle de Plata and cook through until veggies soft
Turn up heat slightly and add lamb to the veggies.  Cook through for 1-2 minutes until lamb is medium rare
In a separate pan, warm up corn tortillas (per packet instructions)
On a plate assemble veggies and lamb onto the tortillas and add lettuce, tomato, avocado and cheese
Garnish with fresh coriander
