Chilpotle Grande Tortilla Fry-Up
Hearty, with a nice spicy touch
4 eggs
2 tsp, butter
2 onions, peeled and chopped in half
2 tomatoes, cored and sliced in half long-wise
8 garlic cloves, peeled and sliced in half long-wise
1 tsp Tio Pablo Mexican Oregano
1 cup, fresh coriander
1 avocado, diced
½ cup crumbled feta
4 Tio Pablo Grande Tortillas
2-3 Tbl olive oil
3 La Morena Chilpotle Peppers with Adobo Sauce
Salt and coarse black pepper, to taste


In a large frying pan, heat 1 Tbl olive oil and add the tomatoes, onion and garlic. Flip only occasionally until both sides of the tomatoes are grilled and onions blackening. Add salt, pepper and Mexican Oregano and then place into a bowl.

In same frying pan, melt butter and fry eggs to your liking. Season with salt and pepper.

While eggs are cooking, heat another large frying pan with 1 Tbl oil, Chilpotle Peppers and Adobo Sauce. Heat each of the Grande Tortillas until soft and coated. Add extra Tbl of oil to pan, as needed.

Place tortilla onto a plate and layer one side with coriander, fried veggies and then egg. Sprinkle with feta and top with avocado. Fold over the tortilla and eat while warm. Serves 4.
