Chilpotle and Coca Cola Chicken Tacos
Liquid reduces into a caramelized, sweet, spicy BBQ sauce
2 skinless chicken breasts, cut in half
1 medium yellow onion, sliced
4 cloves garlic, minced
1 Tbl sunflower oil
4 La Morena Chilpotle Peppers
2 ¼ cups Coca Cola (Mexican Coke is famous for still using cane sugar instead of corn syrup)
Salt and coarse black pepper, to season
8 Tio Pablo Corn Tortillas
2 cups Iceberg lettuce, shredded
1 avocado, sliced
Handful of cherry tomatoes, sliced in half


In a large saucepan, heat the oil until smoking and add the chicken to sear either side. Season generously with salt and pepper. Lower heat and add onions and garlic, and cook with the chicken until onions are soft.

In a blender puree ¼ cup Coca Cola with the chilpotle peppers. Add mixture to the chicken and cook for 1-2 minutes. Then add the remaining coke and let simmer for about 20 minutes, until the liquid thickens and caramelizes.

Warm corn tortillas (I throw them directly onto the gas element until they start to char a little) and plate up with the lettuce, chicken mixture, avocado and tomatoes.

Serves 2-4
