Black Bean Sopes

Black Bean Sopes
Basic sope recipe, but easy to get creative and use a variety of different ingredients
2 cups Tío Pablo Masa Harina corn mix
1 cup warm water
1/4 cup light cooking oil
1 can la Morena Refried Black Beans, 440g
1 cup shredded lettuce
2/3 cup shredded, fresh coriander
1/2 red union, finely sliced
1/2 cup crumbled feta
1 can La Morena Salsa Roja, 200g (optional)


Combine the masa harina with the warm water and create a soft dough.

Dive dough into six balls and roll out into thick patties, about 10cm in diameter

Heat up oil in frying pan or comal and cook patties until crunchy on the outside and slightly brown

While patties are frying, heat up black refried beans, and loosely chop the lettuce and coriander

Place cooked patties onto a plate, spread with refried beans and add a spoonful of salsa

Top with lettuce, coriander, onion and feta

Serve warm
