Agua Fresca de Tamarindo

Agua Fresca de Tamarindo
A very popular Mexican drink – sweet, sour and very refreshing
6-8 tamarind pods
Water for boiling tamarind
8 cups water
Sugar to taste (start at 1/2 cup)
Add ice, stir and enjoy


In a saucepan, boil the tamarind pods on a low heat for about 20 minutes
Take off heat and let steep for about 2 hours
Rub the tamarind pods in the water until all the seeds and pulp separate from the shells
Pour the mixture into a strainer and push the pulp through. Strain it again to make sure to get out the bits of the shells
Pour off strained mixture into a glass jar or pitcher. Add cold water to almost fill the jar then add sugar to taste
Add ice, stir and enjoy
