Pickled Red Onions

Pickled Red Onions
A delicious condiment for numerous Mexican dishes, salads and sandwiches
Ingredients
3 large, red onions, thinnly sliced
1/3 cup lime juice
1/3 cup orange juice
1/3 cup cider vinegar
1 1/2 tsp Tio Pablo Citrus Chilli Salt
1 tsp white sugar
1 bay leaf

Preparation

Pour boiling water over the sliced red onion, let sit for 10 seconds and drain
Combine remaining ingredients, pour over onion and gently mix
Put all ingredients into a glass jar, seal and place in refrigerator for at least 1 hour before using
Can be stored in refrigerator for at least one month but nicest flavour present during the first week
