Chicken Fajitas

Chicken Fajitas . Easy dish, lots of colour and full of flavour

Ingredients
450g chicken breast, sliced into strips
½ red capsicum, sliced
½ yellow capiscum, sliced
½ orange or green capsicum, sliced
1 large red onion, sliced
4 Tablespoons Tio Pablo Mayan Gold Spice Mix
3 Tablespoons safflower oil
Salt to taste
8 Tio Pablo Corn Tortillas or other flour tortillas
1 Tio Pablo Arroz Rojo Red Rice Kit
½ Avocado, sliced
Tio Pablo Salsa Picante de Mango to taste

Preparation

Using a medium saucepan, follow directions on box for Tio Pablo Arroz Rojo Red Rice Mix and let rice cook
For fajitas, heat up 1 Tbl oil in a large frying pan and brown chicken for about 3-4 minutes, until brown
Remove chicken from pan and place in bowl
Do not clean out pan and add the onion and capsicum with 2 Tbl oil.  Brown lightly and then add Tio Pablo Mayan Gold Spice Mix and cook for 5 minutes.  Add ¾ cup water and simmer to reduce, for about 3-4 minutes
Add chicken to pan, with the vegetables, and stir through.  Simmer until mixture thickens and chicken thoroughly cooked.
Remove from pan and serve with warm tortillas, red rice, sliced avocado and Tio Pablo Salsa Picante de Mango
