Black Bean Fritters

Black Bean Fritters
A healthy, vegetarian meal that is rich in protein

Ingredients
1/2 can, La Morena Refried Black Beans 440g
¾ cup breadcrumbs (or Tio Pablo Masa Harina, which is gluten free)
1 egg
½ cup fresh spinach leaves, chopped
2 Tbl fresh coriander, diced
½ red onion, chopped
½ cup corn kernels (fresh or frozen)
salt and pepper to taste
¼ cup olive oil
Feta crumbled to top
Tio Pablo Salsa de Piña to top

Preparation

Combine the first eight ingredients in a bowl and mix through thoroughly.  Form into golf ball sized patties and flatten slightly. Heat oil in frying pan until sizzling and fry patties until brown on both sides.  Serve with feta and a dollop of Salsa de Piña. Serves 2-3
