Arroz Rojo Salad

Preparation

Prepare the Arroz Rojo per instructions on back of packet, using the long grain rice and 1 tsp oil. Let cool
In a bowl, add the rice, onion, carrot, cucumber, tomato, corn, beans and coriander
Create a dressing using the remaining oil, garlic, vinegar, lemon juice, salt and pepper
Stir through and top each dish with feta.
Easily serves 4

Arroz Rojo Salad
Light, fresh and colourful
Ingredients
1 packet, Tio Pablo Arroz Rojo Flavour Packet
300g long grain rice
1 Tbl plus 1 tsp olive oil
¼ red onion, diced
½ carrot, peeled and diced
¼ cucumber, diced
1 tomato, diced
200g fresh or canned corn kernels
200g canned whole pinto or black beans
½ cup coriander, ripped
1 garlic clove, minced
¼ cup lemon juice
2 Tbl red wine vinegar
¼ tsp salt
½ tsp coarse black pepper
1 cup feta cheese, crumbled
